We stayed with my mother in law and as always she had delicious food waiting on us.  We went thrift-ing (my favorite thing!) and got tons of school clothes for my kiddos.  We spent Saturday and Sunday with my side of the family and got to go with my sister and her family to church and then to see Captain Underpants movie after.  (Yes, I fell asleep.  at both.  Don’t judge)

So now we are back home and my oldest started her two a day middle school workouts for volleyball and basketball and we also started our Summer ‘homeschooling‘ that we do every year.  This is one of my favorite things about Summer. I do not have the patience (or desire) to home-school my kiddos full time, but every Summer since my oldest was in kindergarten, we order Summer learning books and do ‘Summer school’ for an hour or so each day. I LOVE this so much. It is a great opportunity to help build skills, prevent Summer learning loss & identify any areas that may need a little extra boost 😉 (Click here for the type of books we use!)

Another Summer favorite is GRILLING!  We LOVE to grill up a bunch of marinaded chicken every week to use for salads, wraps and sandwiches.  It makes easy and healthy lunches so much easier when we have a delicious protein ready to go!  I was actually scrolling through my facebook feed a couple of weeks ago and saw one of my friends had shared a photo of ‘THE BEST marinated grilled chicken EVER’ and as soon as I saw it, I knew we had to try it.  My facebook friend actually found the recipe over at MOM ON TIMEOUT’s Blog and let me just say, I am a NEW FAN!  Y’all……. Grilled Chicken Marinade


When we were newly married, we lived near Dean’s brother, his wife, and two kids. We were living in an apartment, going to college full-time, and working crazy hours to pay the bills. We were poor little college students and would love when Deron and Sarah would invite us over for dinner. Their go-to meal was grilled chicken in a delish marinade. They knew how much we loved it so we ate it almost ever

We were poor little college students and would love when Deron and Sarah would invite us over for dinner. Their go-to meal was grilled chicken in a delish marinade. They knew how much we loved it so we ate it almost every time we had dinner at their home.

So I had to ask her what was in this amazing chicken marinade recipe. It is beyond simple! I decided to tweak it and add a few more flavors to make it extra tangy and zesty.

The extra virgin olive oil keeps the chicken extra moist and juicy. The fresh lemon juice and balsamic vinegar break down the fibers in the chicken to make it tender. The soy sauce and Worcestershire sauce give it a salty depth of flavor. The brown sugar adds some rich sweetness and gives the chicken a nice crust when grilled. All of the ingredients work together in such harmony to make the perfect chicken marinade!

Ingredients
  • 1/2 cup olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 2 cloves garlic chopped
  • 3 tablespoons chopped onion
  • 1/2 cup chopped fresh parsley
  • 1 1/2 cups beer, ginger ale, apple cider, or apple juice
Instructions
  1. Pour olive oil into a 2-cup liquid measuring cup.
  2. Mix together salt, pepper, paprika, cumin, and cayenne pepper and add to olive oil. Add garlic, onions, and parsley. Mix together well with a fork. Slowly add beer as it will cause the mixture to foam and bubble slightly.
  3. Pour marinade over the chicken in the zip top bag. Remove as much air as possible from the bag and seal. Turn the bag from side to side to make sure all chicken has been coated with the marinade.
  4. Place the bag flat on a small, rimmed kitchen sheet pan and into the refrigerator. Allow to sit up to 1 hour or overnight for best results, turning the bag over every few hours to keep the chicken coated.
Notes
Marinade works best for about 5 pounds of chicken.
