Say hello to morning with a big slice of this tasty Cinnamon Roll Coffee Cake!
I’m a morning person. I always have been. Back when I was a little kid, I’d wake up at 5:30am.
I couldn’t go back to sleep, so I’d get up and read comic books, or watch cartoons. And not those new-aged cartoons where everyone gets a trophy. I’m talking Tom & Jerry,  Popeye and Wile E. Coyote. (And eat some sort of a melt in your mouth kind of coffee cake and some milk.)  To be fair, it just slightly reminds me of a coffee cake flavor, but definitely more moist.

Instead of a crumb topping, you have an ooey gooey cinnamon and glaze topping, which sinks in as it bakes. They are hills and valleys of cinnamon and glaze.
Cinnamon Roll Coffee Cake is the best of all worlds, easy, sweet and impressive! It has all the flavors of a delicious cinnamon roll with about 5% of the effort. With a delicious sweet glaze, and even a few seconds in the microwave the following day, it will be the best accessory to that cup of coffee we all look forward to in the morning.

Mother’s Day is coming up this Sunday and I’m not too excited. We live pretty far from family, so there is no celebration to attend and our little ones are too young to understand what Mother’s Day is. Instead, I am using it as an opportunity to save my calories until Memorial Day when I blow through them with lots and lots of bbq. That being said, I will take any excuse to make a delicious meal for someone, especially a brunch meal. This week we will explore some delicious Mother’ Day options for your weekend needs.
Let’s start the Easy Cinnamon Roll Coffee Cake by setting the oven to preheat at 350 degrees.
Mix flour, salt, sugar, baking powder with a whisk. In a separate bowl mix the milk, eggs and vanilla. Mix the wet and dry together, then add in the melted butter.
Use some baking spray to spray a rectangular cake pan, 9×13, then pour the batter evenly into the pan.

Yup, I’m talking about Cinnamon Roll Coffee Cake !!

INGREDIENTS
CAKE
  • 3 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup white sugar
  • 4 teaspoons baking powder
  • 1 ½ cups milk
  • 2 eggs
  • 2 teaspoons vanilla
  • ½ cup butter, melted

CINNAMON TOPPING
  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 2 tablespoons flour
  • 1 tablespoo

CAKE
  • 3 cups all-purpose flour

  • ½ cup butter, melted
CINNAMON TOPPING
  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 2 tablespoons flour
  • 1 tablespoon cinnamon
CREAM CHEESE GLAZE
  • 2 oz cream cheese, softened
  • 1½ cups powdered sugar
  • 3 Tablespoons milk (may need more)
  • 1 teaspoon vanilla extract
INSTRUCTIONS
  1. Preheat oven to 350
Cake
  1. In a large bowl, sift together the flour, salt, sugar and baking powder.
  2. Beat in milk, eggs, vanilla
  3. Stir in melted butter.
  4. Pour the cake batter into a greased 9 X 13 inch pan. Set aside
Cinnamon Topping
  1. In a medium bowl, mix together all of the cinnamon topping ingredients until creamy
  2. Drop spoonfuls of the cinnamon topping mixture on top of the batter.
  3. Use a knife to swirl the cinnamon mixture into the batter.
  4. Bake for 20-25 minutes.
Cream Cheese Glaze
  1. Make the glaze by mixing all of the glaze ingredients until silky. You may need more milk or more powdered sugar to reach a desired glaze consistency.
  2. Insert a toothpick into the cake part to check for doneness.
  3. Allow cake to cool for 10 minutes before serving
  4. Drizzle on the cream cheese glaze.
  5. Serve warm.
