Ingredients
- 4 cups cauliflower a large head
- 1 small onion diced
- 1 teaspoon salt
- 1 teaspoon pepper ground black pepper
- 6 cloves garlic minced
- 3 cups chicken broth
- 8 oz cream cheese
- 1/2 cup cheddar cheese shredded
- 1/2 pound bacon cooked and chopped
- 2 strips of scallions sliced
- Cut the cauliflower into florets and place it in your crockpot with your onion, salt, pepper, garlic and chicken stock.
- Cook on low for 6 hours or high for 4 hours.
- Once its done add your cream cheese and cheddar cheese. Using an immersion blender puree the soup until it is smooth and creamy.
