Pineapple Sweet And Sour Chicken
Okay, today's recipe turned out SO good! This pineapple version of sweet and sour chicken has a perfect sweet to savory ratio and is a quick weeknight dinner idea.
It's family friendly, easy to make and budget friendly too! If you're a meal planner, make sure to add this recipe to the meal plan rotation.
This chicken is delicious served over white rice, fried rice, noodles or zoodles! You could also use zucchini, mushrooms, bell pepper or shrimp in place of chicken or any of the vegetables.
It's also very easy to double or triple the recipe if you're cooking for a big family meal, or want to have some leftover to eat throughout the work week.
Yield: 4 Servings
Ingredients:
- 1/4 cup olive oil
- 2 chicken breasts, thinly sliced
- 3 tablespoons all purpose flour
- 3 tablespoons cornstarch
- 1/2 cup celery, thinly sliced
- 1/2 cup carrots, shredded or matchstick cut
- 1/2 cup white onion, finely diced
- 3 cloves garlic, minced
- 1- 8 ounce can pineapple tidbits, drained and reserve juice for sauce
- 3 tablespoons light brown sugar
- 2 tablespoons white wine vinegar
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- cooked white rice
- sliced green onions, optional for garnish
Instructions:
- Place chicken, flour, cornstarch, salt and pepper, in a ziploc bag, and shake until chicken is evenly coated.
- In a large non stick skillet, heat olive oil over medium high heat.
- Add coated chicken, and cook until it starts turning brown on each side and is almost cooked through.
- Add celery, carrot, onion, garlic and pineapple.
- Saute for about 5 minutes or until veggies start to soften.
- Combine pineapple juice, brown sugar, vinegar, soy sauce and ketchup in a bowl and stir until mixed. Set aside.
- Reduce heat to medium.
- Add the sauce to the chicken and veggie mixture and continue to cook until it thickens, about 2-3 minutes.
- Remove from heat.
- Serve over white rice and garnish with green onion
